Roasted Garlic Mashed Potatoes ~ Try this healthy spin on your traditional mashed potatoes. Can be easily adapted to be vegan or dairy free.

Fluffy delicious mashed potatoes are a comfort food usually loaded down with lots of butter and cream, but they can be just as yummy using lighter, more healthy ingredients. We pair this with my Pork Tenderloin or Roast Turkey. Make extras, leftovers are great in my Shepherd's Pie!

Potatoes are probably the easiest vegetable to grow. They actually end up taking over your garden if you aren't careful so it's best to give them their own garden box or space in the garden. I learned this the hard way so now they lay claim over a good chunk of space in the garden and every year I leave a few in the ground and in the spring new ones sprout right up. The best part of gardening potatoes (besides the superior taste) is digging those little gems up! The kids love this and find it to be like a treasure hunt. The excitement on their faces when they find one buried in the dirt is priceless!

~Roasted Garlic~

Garlic is elevated to a whole new level when you roast it leading way to a buttery, sweet, nutty taste. The options are almost endless as to what you can add roasted garlic to! I also like to include it in my Corn bread stuffing. You can store the extra roasted garlic cloves in a jar in the fridge for future use.

Roasted Garlic Mashed Potatoes

Prep 10 m ∙ Cook 30 m ∙ Makes 6

Ingredients
  • 1 whole bulb garlic (for roasting)

  • 2 tbsp olive oil

  • About 3 cups organic chicken broth (or vegetable stock)

  • 6 large potatoes, cut into 1-inch pieces

  • ¼ butter (or earth balance for vegan)

  • ¼ cup light cream cheese (or vegan dairy free type)

  • ¼ tsp onion powder

  • Salt and pepper to taste

Directions

Roasted garlic: Cut ¼ inch off the top of garlic bulb. Drizzle with about 2 tsp olive oil. Wrap in aluminum foil and roast on baking sheet at 400 degrees for 30 - 35 minutes or until softened. Remove from foil and squeeze out the tender cloves from their shell onto a plate. You can mash with a fork and add it to the potatoes once they are cooked.

Potatoes:

In a medium sauce pan boil the potatoes until fork tender about 15 minutes. Drain and place back into pot on low heat to continue drying out the potatoes. Add in your roasted garlic and mash together with a potato masher. Add in your broth, butter, cream cheese and spices and continue to mash until desired consistency. Garnish with fresh parsley if you like.
