Overnight Superhero Oatmeal

Overnight Superhero Oatmeal~ Wholesome blend of oats, chia, hemp, and flax seed give this easy breakfast a superfood punch. The real power behind this recipe is my Superhero Superfood Blend.





Do you sometimes find yourself running out of time for a healthy delicious breakfast before running off to your daily activities? Check out this yummy time saving morning energy boost!





You might be asking yourself "why is this called superhero oatmeal?" The name was created by my son Tyler who thinks this is what super heroes have for breakfast, since there are so many "super foods" in the recipe such as my Super Hero Super foods Blend and Goji berries.






The best part of this recipe is that you can put it all together the night before, and save time in the morning!



Overnight Super Hero Oatmeal

Makes: 4 servings

Ingredients
  • 2 cups old fashioned oats (gluten free)

  • 2 Tbs ground flax

  • 2 Tbs chia seeds

  • 2 Tbs hemp seeds

  • 2 Tbs coconut sugar (or brown sugar, or maple syrup)

  • 1/2 tsp cinnamon

  • 1/8 tsp salt

  • 2 cups almond milk (or milk of choice)

  • 2 cups water (or you can use all milk instead if you like your oats super creamy)

In the morning add to pot:

  • Optional - 1/4 cup goji berries, diced apples, raisins or crasins for added sweetness

  • Splash of vanilla extract...after the oatmeal is fully cooked and off the heat.

Directions

Add all the ingredients up to milk or water into a medium saucepan.

Soak overnight in your refrigerator. In the morning, add in any of the additional mix-ins you like.

Cook on medium heat for about 15 minutes stirring every once in a while.

Remove from heat and stir in a splash of vanilla extract.

Top with your favorite toppings. The kids like additional maple syrup and I like nut butter and sliced bananas or berries...ohh and sometimes we throw some chocolate chips on for fun!
